Chocolate Covered Bananas with Nuts

Chocolate Covered Banana with Nuts 


Ingredients: 
Skewers (I use the Candy Sticks) 
Bananas
Semisweet Melting Chocolate
Chopped Nuts (I chose walnuts)

Directions:
Peel + Cut Bananas
Place Banana on Skewer
Melt Chocolate in a bowl
 (50% power 30 seconds + stir + 30 seconds stir +  until completely melted)
Dip Banana in chocolate
Roll in Nuts
Freeze for a few hours
Enjoy! 














Overnight Oats

Overnight Oats
Strawberry Banana 


Ingredients: 
Old fashion Oats 
Small Banana cut into slices
Strawberries cut into slices 
Coconut Milk 
Local Organic Honey 

Directions:
Combine all ingredients 
Place into a mason jar, cup, or airtight container
Cover with lid and place in icebox for at least 2 hours, preferably overnight
Add more milk, honey, or fruit in morning if desired
Enjoy! 







Turkey Humus Wraps

Are y'all tired of the preschool recipes yet? 
I hope not because I have a few more we tied! 

The turkey humus "burritos" as Eli likes to call them were a hit! I will say the ezekiel 
wrap was a little dry so next time I'll use something different like a delicious tortilla! 
I'm liking this assignment for JLCC as I can use them for my little guys lunches! 
So fun! 

Here are the Turkey Humus Wraps! 

Ingredients: 
Ezekiel Wrap  
Roasted Red Pepper Humus 
Shredded Cheddar Cheese 
Organic Turkey Slices {Just a tip, always buy meat that is nitrate free! 
Applegate brand is an awesome option 
and there are lots of options at Trader Joe's!}

Directions:
Spread Humus on Wrap 
Add Turkey 
Sprinkle Cheese 
Roll
Cut
Enjoy! 







Ham Kabobs for Precchoolers

Hey Heyyyyy! 

Here is the first lunchtime recipe Eli and I tried
for our JLCC Kids in the Kitchen Cookbook entry! 

We decided to try lunchbox kabobs! 
We had a ball stabbing all the ingredients and 
said this was his favorrrrrite ever! Ha! 

Ingredients:
Applegate Ham
Cheddar Cheese squares
Heirloom Tomatoes 

Directions: 
Add all items to stick 
Enjoy! 








I'm going to send this for Eli's first day of school and pray he doesn't use the kabob stick as a weapon! 


Frozen Yogurt Bites

Oh hi old blog that I neglect! 
It's been a while! 

My placement with Junior League this year is Kids in the Kitchen. 
Initially, I didn't know much about the committee and thought it was simply an 
event the JLCC hosts once a year. 
Since our meetings have started I have learned a great deal and have fallen in love with the purpose behind the committee. 
We are committed to teaching children in many different socioeconomic backgrounds the importance of healthy eating from a young age! We are putting together a children's cookbook and I am in charge of 6 recipes for pre-school age kids so I thought I would share them here too!! 

I have to admit 99% of the time Eli and I cook {aka BAKE}  together we bake something unhealthy so this was different for us! 
He asked, "Mom are we making cookies with lots of sparkles (sprinkles)?!!" 
Ha!! For our first recipe we made Frozen yogurt bites! He loved making these frozen yogurt bites just as much as making cookies!!!! Who knew? 

Ingredients:
Organic Granola
Organic yogurt {we did strawberry + blueberry}
Organic fruit {we did strawberries, blueberries + blackberries}


Directions: 
Place mini muffin paper cups in mini muffin pan 
Scoop granola into each spot with spoon
Add yogurt with spoon  
Top with berries 
Freeze for a few hours at least
Enjoy!!!






Love having quality time with my little buddy (well and his sister as she was on my hip the whole time)! He kept saying this is my favorite!!!!!!

Skinny Pesto Chicken

Y'all know I love recipe swapping!
Here is a yummy, not so fattening, dinner idea! 
I found the recipe on pinterest! 
One of my goals is to one day grow my own basil and make fresh pesto, 
but for now the store made kind gets the job done! Haha! 
For the boys (Mitch + Eli) I made a bed of buttery noodles but for myself I did a quick spinach side salad with balsamic vinaigrette! 
For dessert I made homemade vanilla icecream (Recipe Here!) and put it in a cantaloupe bowl! 
Mitch's grandma used to do this for him as a kid and he loves it! 
I only had cantaloupe for dessert, gotta loose that baby weight!! 
Here is the recipe for Skinny Pesto Chicken: 

Ingredients

  • 2 boneless, skinless chicken breasts
  • salt and fresh pepper
  • 4 tsp pesto
  • 1 tomato
  • Sliced mozzarella 
  • 2 tsp grated parmesan cheese
Directions:
Wash chicken and dry with a paper towel. Slice chicken breast horizontally to create 4 thinner cutlets. Season lightly with salt and fresh pepper.
Preheat the oven to 400° F. Line baking sheet with foil or parchment for easy clean-up.
Place the chicken on prepared baking sheet. Spread 1 tsp of skinny pesto over each piece of chicken.
Bake for 15 minutes or until chicken is no longer pink in center. Remove from oven; top with tomatoes, mozzarella and parmesan cheese. Bake for an additional 3 to 5 minutes or until cheese is melted.

My 29th Birthday...

I've never really minded getting older, until all the sudden I'm faced with the reality that I am now in my last year if my twenties. There is something freeing about your twenties. You're allowed to make mistakes. You're allowed to be carefree. Something about turning thirty seems so adult. So this last year in my twenties I'm going to live it up!!! 

My birthday was perfecto! I told Mitch I wasted a family day- and a family day is just what I got! 

Friday while the baby was napping and Mitch was watching a movie I ran and redeemed my birthday mani/ pedi!
{Nails: Essie- Resort Fling// Toes: Essie- Truth or Flare}
Saturday morning I awoke to my favorite Stabuck's drink!
Mitch and Baby E then took me to the Mansion at Turtle Creek for Brunch!
{Thanks Travelzoo for the special!} 
The dessert bar was so good!!! 
Lump crab + Bacon & onion roll 
Ok, so Mitch and I had one bite of every dessert! I thought I was going to puke but it was worth it! Lol!
{Dark Chocolate Truffle, Hazelnut Truffle, RaspberryFinancier, Chocolate brownie cake, Raspberry moon-pie, Lemon meringue tart, Pistachio macaroon, Chocolate cappuccino, PB&J, Strawberry Rhubarb, Chocolate Creme Brûlée, Vanilla Creme Brûlée, Coconut Pineapple Creme Brûlée, Dulce de leche, Churro with chocolate sauce and berries brochettes} 
I ordered brisket eggs benedict and Mitch ordered salmon and quinoa. We honestly could only take a couple of bites of everything and came home with a ton left over!

The Mansion is gorgeous! Black and white floors and the most fabulous staircase!  
In the afternoon we went on a walk 

Mitch and baby E took me on a sunset sail + picnic! It was so relaxing and fun! 
    The Hinckley 41 is one of 9 made in the world. "Southern Cross" was made in 1969 and has a fully functioning wood burning fire place. It is known to be the most picturesque sail boats in Texas! 



Fun fact, I grew up going to summer camp for 3 weeks every year- for 3 of those years I took sailing specialty and actually know how to sail! It was fun using the old lingo! "Jive ho!"

We had Eatzi for dinner which is one of our fav's!

The day was perfect! My heart was full! I can't wait to see what this year has in store for me! 
As I prayed over my 29th year I felt a tug that this will be a year of service. I'm not sure what all that will entail but I will try to serve along the way. In everyday life.
